The Whole Enchilada

Have you been waiting your entire life to see and taste the world's largest enchilada?  Well, this destiny can only be fulfilled in none other than Las Cruces, New Mexico, the place I now call home.

Believe it or not, when Kyle first mentioned the possibility of moving to Las Cruces, this was the town's most impressive selling point (according to him).  Once a year, the town holds its legendary Whole Enchilada Fiesta where an enormous enchilada is presented and served to spectators.  Fortunately for both us, we quickly learned that Cruces has much more to offer in addition to its massive Mexican dish.

When the event finally arrived, we couldn't pass it up.  After all, it's what first enticed us to begin a new life in the Land of Enchantment.  So here it is.  Feast your eyes on the hugest, most gigantic, incredibly colossal enchilada... what was left of it anyway!)

A lot had already been devoured by the time we arrived.  Everyone wanted a taste.

I let Kyle be the guinea pig.

He concluded that it was big on size, not on taste.
